A fragrant and flavorful Persian dish, Sabzi Polo is a herbed rice traditionally served with fish, making it a perfect meal for Nowrouz.
For Sabzi Polo (Herb Rice):
* 2 cups basmati rice
* 1.5 cups water
* ½ portion of Persian herb stew (a mix of parsley, cilantro, chives, and dill)
* A pinch of salt
* 2 cloves fresh garlic, thinly sliced (optional, for extra flavor)
* 2 tbsp dried dill (optional)
* 2 tbsp olive oil
* 1 tbsp saffron solution (optional, for extra aroma and color)
For Fried Fish:
* 2 fillets of your preferred fish (e.g., salmon, cod, or tilapia)
* Salt and pepper to taste
* 2 tbsp flour (optional, for a crispy coating)
* 2 tbsp oil for frying
For Kuku Sabzi (Herb Omelet):
* Remaining ½ portion of Persian herb stew
* 2 eggs
* A pinch of salt and pepper
* 2 tbsp oil for frying
* (Optional) 2 tbsp crushed walnuts and 1 tbsp dried Persian barberries (zereshk)
Step 1: Prepare the Sabzi Polo (Herb Rice)
1. Rinse the basmati rice under cold water until the water runs clear.
2. In a pot, bring 1.5 cups of water to a boil. Add the rinsed rice, Persian herb mix, salt, and fresh garlic slices (if using).
3. Stir in dried dill for extra flavor, if desired.
4. Let the water evaporate completely, then drizzle olive oil over the rice.
5. Cover the pot with a lid and reduce the heat to low. Let the rice steam for 15–20 minutes until fully cooked and fluffy.
6. For extra aroma, drizzle a small amount of saffron solution over the top before serving.
Step 2: Fry the Fish
1. Season the fish fillets with salt and pepper.
2. Lightly coat them in flour for a crispy texture (optional).
3. Heat oil in a pan over medium heat and fry the fish for 3–4 minutes per side until golden and crispy.
Step 3: Make Kuku Sabzi (Herb Omelet)
1. In a bowl, whisk eggs with salt and pepper.
2. Mix in the remaining Persian herb stew and (optional) crushed walnuts and dried barberries for extra flavor.
3. Heat oil in a pan and pour in the mixture. Cook over medium heat for 5–7 minutes per side until golden brown.
Step 4: Serve and Enjoy!
Plate the Sabzi Polo alongside the fried fish and a slice of Kuku Sabzi. Enjoy this delicious Persian meal with a side of yoghurt, pickled vegetables, or a squeeze of fresh lemon!
