Ingredients (Serves 4)

  • 1 Exotic Bazaar Persian Herb Stew Meal Base
  • 200g halloumi, cut into cubes
  • 1 can (400g) kidney beans, drained and rinsed
  • 2 tbsp vegetable oil
  •  Water or vegetable stock if required
  • Fresh coriander or parsley, for garnish (optional)
  • Steamed basmati rice, to serve

Instructions

 1: Sear the Halloumi

  1. Heat 1 tbsp of vegetable oil in a pan over medium heat.
  2. Add the cubed halloumi and pan-fry until golden brown on all sides, about 2-3 minutes per side. Remove and set aside.

2: Simmer the Stew

  1. Pour in the Persian Herb Stew Meal Base and stir well.
  2. Add kidney beans and  water or vegetable stock if needed
  3. Bring to a gentle simmer and let it cook for 15–20 minutes, stirring occasionally.

4: Add the Halloumi

  1. Return the seared halloumi to the pot and let it simmer for 5 minutes to absorb the flavours.

Step 5: Serve & Enjoy

  1. Garnish with fresh coriander or parsley, if desired.
  2. Serve hot with steamed basmati rice and enjoy the rich, herbaceous flavours!

Pro Tips

 Want a deeper flavour? Add an extra dried lime (limoo amani) for more tanginess.
 Like it spicy? Sprinkle in some chilli flakes or serve with pickled chillies.
Make it vegan! Swap halloumi for tofu and pan-fry it until golden.
