- 1/2 cup of button mushrooms quartered
- 1 red onion, thinly sliced

- Salt to taste
- Fresh parsley, chopped, for garnish
For Garnish:

- 1 tsp sesame seeds (optional)
- Fresh coriander or parsley leaves
Method:
1. Sauté the Vegetables:
- Heat olive oil in a skillet over medium heat.
- Add red onion and cook for 2–3 minutes until softened.
- Add capsicum, zucchini, and eggplant, stirring frequently. Sauté for 8–10 minutes until tender.
- Sprinkle with Exotic Bazaar's Lebanese Za'atar, stirring to coat evenly. Adjust salt to taste and set aside.
2. Assemble the Bowl:
- Arrange the sautéed vegetables, cucumber, carrot, avocado, and tinned tuna in a large serving bowl or individual bowls.
- Drizzle with soy sauce and sesame oil for extra flavour.
3. Garnish:
Sprinkle Exotic Bazaar's Dukkah generously over the tuna and vegetables. Add sesame seeds and fresh herbs for a final touch.
4. Serve:
