Ingredients
- 2 tbsp olive oil
- 1 Exotic Bazaar Moroccan Tagine Meal Base
- 500g chicken thighs or breast
- 1 onion, finely sliced
- 1 carrot, sliced
- 1 zucchini, sliced
- ½ cup dried apricots (or raisins)
- ½ cup water
- Fresh coriander and toasted almonds for garnish
- Cooked couscous or rice, to serve
Method
1: Sear the Chicken
Heat olive oil in a deep pan or tagine pot over medium heat. Add the chicken thighs and sear for 3–4 minutes per side until golden brown. Remove and set aside.
2: Sauté the Aromatics
In the same pan, add the sliced onion sautéing until soft and fragrant.
3: Build the Flavour
Return the chicken to the pan and add the carrot, zucchini, and dried apricots. Pour in the Moroccan Tagine Meal Base and ½ cup of water. Stir to combine.
4: Simmer to Perfection
Cover and let the tagine simmer on low heat for 30 minutes to 1 hour, or until the chicken is tender and the flavours have melded beautifully.
5: Garnish & Serve
Sprinkle with fresh coriander and toasted almonds for a touch of freshness and crunch. Serve with fluffy couscous or warm flatbread.
Pro Tip
For extra depth, add a cinnamon stick or a pinch of saffron while simmering.
