This mix of cucumber & yoghurt (aka tzatziki) is what we have almost every day in summer. With raisins, walnuts, rose petals & mint, simply add water to serve it like a cold soup or make it with thick yoghurt to serve it as a dip. Either way, I'm sure you'll be impressed.
INGREDIENTS:
- 2 Cups Greek Yoghurt (or unsweetened coconut yoghurt)
- 1 cup Diced Cucumber (eq. 3 Lebanese cucumbers)
- 1/2 cup Walnuts
- 1/2 cup Raisins
- 1.5 tbsp Exotic Bazaar Rose Petals
- 2 tbsp Dried Mint
- Pinch of Salt & Black Pepper
- 5 Cubes of Ice
METHOD:
1- Place the yoghurt in a large bowl. Add 5 ice cubes to the yoghurt and mix them together. (If you don't have ice replace it with 1/4 cup of cold water)
2- Dice the cucumbers into 2 cm cubes and place them on top of yoghurt.
3- Chop the walnut and add 2/3 cup to the bowl.
4- Add 2/3 cup of the raisins to the bowl.
5- Grind 1 tbsp of the dried mint by placing them between your palms and rubbing your palms together.
6- Grind 1 tbsp of rose petals the same way.
7- Add the ground rose petals and mint to the bowl.
8- Add a pinch of salt and pepper and mix everything really well.
9- Just before serving, garnish with the rest of the rose petals, mint, walnuts, and raisins.
