Easy Moroccan Chicken Tagine Recipe - Serves for 4
INGREDIENTS:
- - 1 pouch
Exotic Bazaar's Moroccan Tagine
- - 4 pieces of chicken
- - 1 medium-sized onion diced
- - 1 cup sliced zucchini
- - 1 cup sliced carrot
- - 2 medium potatoes cut into wedges
- - 1 can of chickpeas
- - Salt & pepper to taste
- - Coriander for garnish
- - Optional: Chili Flakes
METHOD:
1 - Heat oil in heavy skillet. Add onions and cook over a medium-low heat, until lightly browned.
2 - Add chicken pieces and brown on all sides.
3 - Add one cup of boiling water/stock, replace the lid and allow to simmer.
4 - Meanwhile in a medium-sized frying pan, fry the potatoes first then the carrots, followed by the zucchini.
5 - Add in the chickpeas and fry for an extra minute.
6 - Add the browned vegetables & chickpeas to the skillet.
8 - Turn up the heat and once it is boiling let it then simmer for an additional 20 minutes or until the veg is cooked.
9 - Sesaon to taste (add the chili flakes if you prefer extra heat).
10 - Garnish with the chopped coriander and enjoy with either couscous, rice or bulgur and a side of salad, plain yoghurt and pickles.
