Slow Cooker Sticky Harissa Chicken

Ingredients:

  • 1 kg boneless, skinless chicken thighs
  • 4 cloves garlic, finely minced (See notes)
  • 2 tsp fresh ginger, grated (See notes)
  • 8 tbsp dark soy sauce (See notes)
  • 2 tbsp oyster sauce (optional, See notes)
  • 4 tbsp honey, either runny or set
  • 4 tbsp BBQ sauce
  • 1 tsp Exotic Bazaar's Harissa
  • 1 tbsp cornflour (to thicken sauce at the end)

Method:

  1. Prepare the sauce: In a bowl, mix together the garlic, ginger, soy sauce, oyster sauce (if using), honey, BBQ sauce, and Exotic Bazaar’s Harissa. Stir well to combine into a smooth sauce.

  2. Arrange the chicken: Place the chicken thighs in the slow cooker, making sure they are spread out evenly. Pour the prepared sauce over the top, ensuring each piece of chicken is coated in the marinade.

  3. Cook the chicken: Set your slow cooker to low and cook for 5-6 hours, or on high for 3-4 hours. The chicken should be tender and juicy when done.

  4. Thicken the sauce: Once the chicken is fully cooked, carefully remove it from the slow cooker and transfer the sauce to a small saucepan. Bring the sauce to a simmer over medium heat and stir in the cornflour. Cook for 2-3 minutes until the sauce thickens.

  5. Finish the dish: Return the thickened sauce to the slow cooker, coating the chicken thighs with the glossy, sticky glaze. Let the chicken sit in the slow cooker for an additional 5-10 minutes on low to absorb the flavours.

  6. Serve: Garnish with fresh herbs such as coriander or parsley and serve over rice, couscous, or your favourite veggies for a delicious, slow-cooked meal.

Notes:

  • Garlic & Ginger: Freshly minced garlic and grated ginger elevate the dish with their robust flavours. If you're in a pinch, you can use pre-minced versions, but for the best results, go fresh.
  • Soy Sauce: Dark soy sauce works best here for its deep, caramel colour and rich flavour. If you have light soy sauce, it’s still fine to use but the result may be lighter in appearance.
  • Oyster Sauce (Optional): This adds an extra layer of savoury richness, but the recipe still works well without it.
