Ingredients

  • 1 cup couscous
  • 1 cup vegetable or chicken stock
  • 1 tablespoons Exotic Bazaar’s Moroccan Souk spice blend
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, peeled and diced
  • 1 zucchini, diced
  • 1/2 cup sultanas or raisins
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Optional: toasted almonds or pine nuts for garnish

Instructions

  1. Dry roast the spices: Add Exotic Bazaar's Moroccan Souk to a roasting tray and dry roast at 180 degrees for 5 -10 minutes
  2. Prepare the Couscous: In a medium saucepan, bring the vegetable or chicken stock to a boil. Stir in the couscous, then remove from heat. Cover the saucepan and let it sit for 5 minutes, allowing the couscous to absorb the liquid. Fluff with a fork to separate the grains.

  3. Cook the Vegetables and Spices: While the couscous is cooking, heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3-4 minutes. Next add in the Moroccan Souk. Stir in the minced garlic and cook for an additional minute.

  4. Add Veggies: Sprinkle in Exotic Bazaar’s Moroccan Souk spice blend, stirring well to coat the onions and garlic. Add the diced red bell pepper, carrot, and zucchini. Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.

  5. Combine and Flavour: Stir the cooked vegetables into the fluffed couscous. Add sultanas or raisins for a touch of sweetness. Mix in the  lemon juice. Season with salt and pepper to taste.

  6. Serve: Transfer the Moroccan couscous to a serving dish. For an extra touch, sprinkle with toasted almonds or pine nuts if desired. Serve warm or at room temperature.
